Without knowing any of your variables we can only give generic responses. Lower temp, raise humidity, trim less if things are drying to fast. I believe it's better to jar too soon than too late. Especially if they're drying too fast. I need to get my dry to slow down next time as well. I had to jar after a few days because they were drying out too fast
