Tonight's sourdough was made using discard from feeding my starter last night. I find it takes a little longer to raise. But, I waste very little when I feed my starter. I'll post a crumb picture later. Crumb:
Well I'm taking the same recipe I used last time for the beer bread but I added a stick of melted butter and about 3/8 of a cup of sugar to the mix.....waiting on the rise then I'm gonna punch her down and shape her. Gonna try covering my bread for the first time as well, don't have a Dutch oven and I can't find any roasters so the crock pot ceramic piece flipped upside down will have to do lol gonna be interesting methinks..... I got the munchies, so I through together this banana bread with walnuts and chunks of bitter sweet chocolate. It is freaking delicious..
I made this bread pudding tonight. I used leftover bread from the above loaf. It was heavenly. And.. I'm not just saying that because I'm high. I did share most of it. This is all that's left. Here's the recipe I used. Bread Pudding II
I haven't baked bread in about 2 years. Had to get my diabetes under control. The last few weeks I've baked several no knead loaves for some family events and I'm proud to say I'm still abstaining from eating any. Here's a loaf of garlic herb bread and just a straight up loaf that just came out of the oven. Sent from here to there.
Thanks Tim, Yeah, I get it. TBH, I really have no desire to start eating bread again but I sure get enjoyment out of baking bread for others. Mrs. Chunk plays Bunco with several of her girlfriends so I baked a couple of the same loaves yesterday for them. One of hose girlfriends has a husband that has some pretty bad medical issues and has a hard time keeping any food down. She brought some home to him and he was able to keep it down so she asked me for the recipe. It's really not something you can just do right away if you've never done it before so I just mixed up a couple of batches and told her I'd make some for them this time then have them come over and show them the basics. This formula was just a 50% hydration recipe I've used for no knead before but on the garlic herb loaf, I mixed 2 Tbsp's Italian seasoning in with the dry ingredients and 1 Tbsp of minced garlic in the water. Although I haven't tried it, it got rave reviews from the Bunco girls. Have a good weekend!

Could you post your Freaking Delicious Banana Nut Bread recipe? I got the munchies just looking at it! Last I made mine it turned out un-edible (raw in center, and I re-baked it- yukkkk). I will be using a thermometer from now on. How ripe do you let your bananas get?
I use organic bananas so when they start showing brown speckles they are ripe enough. Like these. Here's the recipe I use. https://www.simplyrecipes.com/recipes/banana_bread/ For some reason they changed the amount of baking soda. My printed recipe calls for 1 teaspoon not 1/2. I use 1/2 cup chopped walnuts and 1/2 cup Ghirardelli bittersweet chocolate baking chips too. I also use a 9" x 5" pan so it's a flatter bread. HTH's.
