How to Hard Candy??!!

    I've tried a millon different ways to make hard candies like they do at the shops...but my candy wont harden!! I've followed recepies and tutorials....even used my mothers candy recipe!! I dont stir it, I dont let it get past 300°!!!!
    I hold my breath but maybe I'm not holding my face right 0.o
    Any advice really would be much appreciated
    I've got my butters and my chocolates down, tinctures I've mastered, it's this Damn hard candy
