soil is much more forgiving and acts more like a natural buffer, hydro is more of a constant uptake so it needs to be adjusted and watched more frequently.
Basically it comes down to solubility and delivery of key nutrients and what PH level makes them soluble for root absorption. The breakdown of the nutrients and chemical/natural reactions needed to take place have different requirements in soil vs hydro, hence the different PH levels. For hydro, proper nitrogen delivery happens best at 5.6-5.8 ( that's the PH during veg) and once you switch to flower you can let the ph get up to 6.2-6.4 because the nitrogen is being phased out and more important flowering nutrients have a higher PH solubility
They don't, but the soil has its own pH and will affect the water that you put in to it so as long as the soil pH is right, getting the water spot on is less of a concern. Tap water is likely to be a bit high but there is no need to bring it down as the soil will do that. Hydro mediums usually have zero affect on the pH value of the water so getting it low enough is important
