The girlfriends on a bread diet. So, only I will be eating this heavyweight. I made the crust with basil and onion. I used one pound of Italian sausage. It's a bit much.. But, at least I'll stroke out with a smile on my face.
I thought I'd do a pictorial of how I make my pizza's. The dough recipe is here on this thread.This pizza will be grilled on my Weber Spirit II grill. I use parchment paper to aid with dough shaping and transfer.I use my pizza stone as a guide to make it. Next, I add cornmeal as I like the taste and added crunch.I also use an air bake cookie sheet as my peel. I find transferring to the pizza stone easiest this way. Then the dough is pushed out from the center as shown here. I use about 2 tablespoons of good olive oil to help keep my hands from sticking as it's a 79% hydration dough. I dimple the dough for a more even crust. Next is my homemade sauce. Cheese and mushrooms added. Cheese and garlic sausage added along with lots of red pepper flakes. I remove the parchment paper 1/2 way through baking the pizza. I do use a wooden peel for that as I'm also rotating the pizza at that point. This is the pizza right out of the grill.

Here's a grilled vegetarian pizza I made today. Onions,olives,sundried tomatoes and porcini mushrooms. It is delicious.
I love enchiladas too. I make an unflavored basic sauce. This way it can become anything when I'm ready to use it.

I do sometimes. This pizza is delicious. I believe the last time I had anchovies on a pizza was about 30 years ago with my first ex father in law.
@TimJ have you ever used dough that was bought frozen for pizza crust??? im thinking of trying it out.
I have used store made dough. But, I have never had great success with it. I'll post my 1 hour dough here again for anyone interested. This way they don't need to search for it. When making bread or pizza I find it's very important to weigh out your flour. I use a basic kitchen scale. I use my small grams scale for my salt addition. One Hour Pizza Dough 300 grams of bread flour - "All Purpose flour will also work" This is around 2-1/2 cups. 1 Teaspoon of dry yeast 1/2 Teaspoon of sugar 1 cup of warm water Mix the above ingredients together and let the flour absorb the water for 10 minutes. This is called autolyse. It will make a better finished dough. Now we will add some flavor. 2 Tablespoons of good olive oil 7 grams or 1-1/2 teaspoons of kosher salt I mix these in using a grip and squishing motion. It will take 3-4 minutes to get them well mixed. Let rise 1 hour and make your pizza. I want to add this is a 79% hydration dough so it is a bit sticky. I do show how I make my pizza using this dough in the above thread. Once you try this recipe and master it. I do not believe you will ever be satisfied with a parlor pizza again.
