i guess chewy isnt bad actually i had some chewyish bacon at a restuarant today and it tasted purrrrfect

I don't even remember how I got here... but anyway... I like it in between crunchy and soft too but I only eat it about 2-4 times a year.
On topic, I like my bacon at that stage where, it's not wiggly, it's not crispy, but instead it's almost jerky... smokey, salty, not burned, and just a little bit chewy. I also make true bacon hash jerky, starting with pre-cooked, under-done bacon (to sterilize the meat and remove most of the fat drippings), before the flavoring and jerky process. Off topic and in reference to the above posters, just last week I made some hashy tacos, and used some left-over bacon grease from burgers the night before, combined with the hamburger fat from the taco meat, to fry up my soft-shell 'tortillys' (ie. tortillas). YUM!
