Serious Meatloaf Talk

  1. So I'm one of those people who believes food really brings people together, and lately I feel my group of friends really needs that. Most of us are going through either life-changes or depression in a few cases, and there's just been a lot of drama.
    My idea is this: bring everyone together at our favorite smoking spot, get high out of our minds, play video games and have a banging ass meatloaf. I know it's not super therapeutic really but I just think it's a good way for us to just all hang out and just relax and enjoy each others company. That's just me.:eek:

    So what I was gonna ask is, what can I put in this meatloaf to make it something that is awesome and just lovely when you have the munchies? I'm already thinking a bacon cheeseburger sorta thing, but I really don't know the taste preference of most of my friends, but I don't wanna play it safe either. What should I do?? Any ideas or add-ins or side dishes?

    Meat,crushed saltines, Black pepper, onion, garlic, cayenne, msg, eggs,Worcestershire, ketchup, mustard, parsley(optional), chilled(not optional) I wish I had an oven

    Stuff the meatloaf with cheese(cheedar(white)or manchego and put bacon on the potatoes and butter(not margarine not buttery spread, but butter)salt and pepper , cream or sour cream bacon and some chives

    Sweet potatoes could replace potatoes and they are healthier for you until you put sugar on them

    Any veg you have on hand green
     
  4. I think Ketchup cheapens a meatloaf. Use Tomato sauce instead.

  8. I read your post and i thought about making a Potloaf...


    1 packet onion soup mix
    1 (16 oz.) can whole peeled tomatoes
    1/2 cup chopped buds
    2 lbs. ground beef or chicken (or turkey)
    1 egg
    4 slices bread, crumbled

    Mix all ingredients and shape into a loaf. Bake for one hour in
    400-degree oven.

    I'm not 100% sure but i think the bud should be decarboxylated beforehand.
     
  9. Meatloaf is really delicious, I find that adding some sage and thyme to the mix really adds a good flavour.
    Also I like to add in some finely chopped onion. Aswell as ground sausage into the ground beef mixture.
     
  10. why dont you have a bbq at a park and bring a bunch of steak/pork/burgers/dogs/ any meat really/ veggies and blaze up. did that a couple times this summer by the lake.
     
  11. I use ground prime rib, $7.99/lb on sale at a local store, some veal and pork. Saltine crackers or panco bread crumbs, eggs, onions, garlic, tyme, worchester sauce, tomato sauce and bacon. Cook with bacon on top but pour off the bacon fat every 10 minutes or your meatloaf will be swimming in grease. Better yet, use a meatloaf tray with a drain pan below the meat to keep the meat roasting not braising. The fat from the bacon and pork will make a nice crusty coating on the meatloaf. Make a tomato sauce to serve with the meatloaf, I never cook the meat with the sauce, it won't get crispy.
     
  12. I use ground steak and add in the normal stuff but I also add green peppers and onions. I also put ketchup on top.

    Damn I want a meat loaf now.

    Ingredients

    1/2 cup walnuts
    2 tablespoons canola oil
    1 onion, diced
    1 large garlic clove, minced
    2 celery ribs, diced
    1 cup mushroom, cleaned and chopped
    2 cups veggie burgers
    1 cup dry whole wheat bread crumbs
    1/4-1/2 cup vegetable broth, as needed
    1/2 cup uncooked polenta
    1 teaspoon dried basil
    1/4 teaspoon dried oregano
    1/4 teaspoon dried rosemary
    1 teaspoon ground cumin
    3 dashes vegetarian worcestershire sauce
    2 tablespoons soy sauce
    1 (5 1/2 ounce) can tomato sauce

    Directions

    Preheat the oven to 350º. Spray a loaf pan or 8x8 square baking pan with nonstick spray and set aside (an 8x8 pan makes a crisper loaf).
    Grind the walnuts into a coarse meal using a food processor or spice/coffee grinder. Place in a large mixing bowl and set aside.
    Sauté any vegetables you've chosen in the vegetable oil until soft. Add to the large mixing bowl along with all the remaining ingredients. Mix and mash together well, adding only as much liquid as needed to create a soft, moist loaf that holds together and is not runny (you may not need to add any liquid if the grains and protein are very moist). Add more binder/carbohydrate as needed if the loaf seems too wet.
    Press mixture into the prepared pan and bake for 45 minutes to 1 hour, or until cooked through. Add the tomato sauce to the top of the loaf during the last 10 minutes.
    Let the loaf cool in the pan for 10 to 15 minutes, then turn out onto a plate or platter and slice. Serve with potatoes, vegetables, and vegetarian gravy, if desired.
    Cold leftover slices of make a great sandwich filling.
     
  15. Mushrooms are a must they help keep it moist. Also always cook meatloaf on a sheet pan but use a cookie cooling rack to raise it up so the grease drips down. Also I always use meatloaf meat mix and add some sausage if I have some.

    I'm not sure if you did your chill out day with your friends already but I have an amazing meatloaf recipe.
    Make your meat mixture your preferred way (I am gluten free but if you want my "meat mixture" recipe just let me know.)
    I put down a piece of parchment and spread my meat out flat on top of it like a big sheet of meat. (rhymed lol) I then take some home made marinara sauce (you could use jarred if you wanted but with diet restrictions I make mine from scratch) I spread the sauce all over on top of my flattened meat. Then I put cheese (usually cheddar) all over on top of that. This next part is optional but some veggies are great added in at this point sliced mushrooms, fresh baby spinach or bell peppers or all of the above are excellent. Just have larger veg sliced up small. Then you grab one end of the parchment and start to roll it up like you do when making cinnamon rolls. Top the log of meat with a little more sauce and cheese. All that's left is to carefully put it in your baking pan and bake until cooked through. This is by far the best way to make meat loaf I have ever had. My husband hates meatloaf as a rule and loves this.

    To the comment "does anyone still like meatloaf"....

    Why yes I do. My moms meatloaf is the shit. Even my picky ass brother in law that HATES meatloaf loves it. Im sorry ur mom sucks at cooking.


    Op. Stuff it with los of mozzarella cheese. Flatten the meat on plastic wrap then place the cheese and roll over into a log. Make sure u seal it up good or or will ooze.

    Make some sauteed sliced potatoes to go with them. Boil potatoes till they are cooked but still very firm. Then add them to a pan with chopped onions and oil. Brown them nicely on all sides, adding more oil if needed. Make sure to season the water when u boil them and again while frying them.

    Then just pick a easy veggie to cool along with it. Always have a protein,starch and veggie with ur meal to balance it.
