What makes you think they're root-bound? If the roots are growing out of the drain holes, that doesn't necessarily mean there isn't any soil left in the pots, just that the roots are doing their thing by growing toward the force of gravity in search of water. I grow to maturity in 3 gallon containers and never experienced a problem with the roots displacing all the soil in the pot.
