pH and organics?

I'm using the first mix described in this: Organics for Beginners - Soil & Organic Nutrients - Growery Message Board .

The writer goes on to mention later that when using organics soilless mixes that pH is not to be worried about. Is this true? If not, what is a good way to bring down the pH?
