depending on the grinder you have it either stays in the teeth and you pick it out or the ground up herb falls thru the holes and falls on the screen, the keif goes thru the screen into the catcher.
In a four-piece grinder that has two pieces for the grinder itself (upper and lower "teeth" levels), you would put a coin in the compartment that holds your ground weed. The theory is shaking around your ground-up bud with a coin in there would knock off additional trichs, ultimately giving you more kief. However, ultimately, this would also make your day-to-day herb just a little bit weaker, which is why I choose not to use a coin.
Yea my roommates use a quarter, and they get a ton more kief then me. I like to keep my dank potent though, and don't shake my grinder
