Chocolate covered PB fudge bites are simple, and almost startlingly tasty if you like peanut butter.... No baking, they only need five or so ingredients which many people already have in their cupboards, and it takes less than 15 minutes to put them together. Here's an easy, single-serving (or two) recipe... And if you're allergic to PB, you can opt for cocoa powder with a few drops of milk instead. Soften, but don't melt 1 tsp butter or coconut oil.... mix in 2 Tbsp peanut butter, 1 Tbsp powdered sugar (or to taste), a pinch of salt and a drop of vanilla if you have it... the better and more you blend, the smoother it will be, then chill in the fridge/freezer for ten minutes or so. A few minutes into cooling, place 2 - 4oz chocolate chips or chopped chocolate in the microwave in a safe cup for 35secs. Remove, stir, then again for another 30 - 35secs. Depending on your microwave, continue if needed until just melted. I prefer a double boiler myself, but the above is easier for someone well-medicated. Take the peanut butter fudge out of the fridge, and spoon out portions as big or small as you like, as few or as many as you need (you may have multiplied the recipe ), and shape them if you want. Dip & roll them in the chocolate one at a time, and place them on wax paper on a baking sheet or an appropriate dish. Place in the fridge for 60 minutes, or the freezer for 20 - 30 minutes. (You may find it easier to roll them in chocolate if you chill the PB fudge for a second time, after shaping the pieces ) They are delicious and *can* be eaten almost immediately without much, if any cooling, but they do get better as they cool and sit... flavor and texture wise, I like them best on and after the second day. Even better, if you have some good herb or hash, to mix and heat with your butter or coconut oil first...
after a long day of not eating and exercising while smoking (my dumb fault) I get home and I open my fridge to find broccoli cheddar soup, and left over pizza. my ideal munchies.
One night, many moons ago, I took saltine crackers and smeared on a light coating of peanut butter and topped with a marshmallow...put in toaster oven till marshmallow browned....and it was pure heaven....

My favorite munchie snack is taquitos... But theres a secret to those little fuckers... Instead of microwaving or oven baking them, try pan frying them with olive oil and butter... Dip em in sum hotsauce and ur as golden as the little tubes of fat u r about to ingest
The above recipes are just great .....but I'm weight watching so it's 'baby carrots' for me....grrrrrr! "V"
