  1. Aren't you the funny one! I can believe that is not butter. :p I am sourcing some of my primary ingredient at the moment and been a bit busy with Ed getting the new equipment installed. We are still working our way through the fudge. Patience my friend. :wave:

If any of you have not taken some time to go through SugarDaddie's Edible thread, I highly suggest a visit. I am thinking that you have it dialed in so well because you cook with your own stash and I must say it is quite a stash you have. I went back to your journal to see what type of trichs you were working with and see that yours is pretty close to the top of the cannaboid range. Link to pic of bud

    How much trim did you use to the 8lbs of butter? I know that in dispensaries they have X, XX and XXX. What would you classify yours as, XXX? And would it be that with the cannabutter only or is that because of the addition of the kief? White Widow is some pretty snowy weed so I would have thought it had enough on its own without the kief? :confused:

    Update:
    I have some fudge in the freezer to see how well it will keep. On the countertop your fudge has about 5-7 days before it dries out a bit too much.

    Cannapeanut Butter is sitting and room temperature for three weeks now with no breakdown in potency, taste or appearance. Looking good!

    Also, many recipes tell you to not get the cheap peanut butter due to the fat content. I took the time yesterday to look at every single jar of peanut butter so see how much of a difference there was. Store brand, organic brand, major brands all have very similar fat content. You are safe to use any peanut butter with the exception of the low fat/light brands. Nutella actually had significantly less fat content however many seem to still have the same type of results which leads me to believe as long as there is a fairly good amount of fat then there is enough for the cannaboids to adhere to.

    After I tumble all my trimmings for kief, I use all the left overs for my cannabutter, basically I will melt down 8-10 lbs of normal butter in a large pot, then I add as much trimmings as needed till I can't fit anymore in the pot, just barely enough for the butter to cover it. So I have no way of really knowing the weight of my trimmings to the amount of butter I use.

    then let it simmer for a couple of hours, then I take it off the burner, let it cool down for an hour, and strain it thru a large commercial grade strainer (even after an hour, the butter is still hot) I put on 3-4 latex gloves, and then squeeze out as much butter still left in the trimming till I have a almost dry ball of trim. then I will strain the butter once more thru cheesecloth to get all the tiny particulate matter the first strainer missed.

    also, as a general rule, I will add 1 Tablespoon of Kief to a batch of cookies that uses 1 cup of cannabutter, as I like to make my edibles strong, it gives people something to talk about.

    so if my stuff were to be rated, I'd put it at the XXX to XXXX rating!

    btw, I didn't make banana bread today, still waiting for the bananas to ripen up, so it looks like it might be monday. the recipe I'll be using calls for 1/2 cup of butter per loaf, I'm not gonna kief this up, for the reason that a consumer can eat a few slices, rather than just one slice.
     
  3. I had a question and thought I would bring it out to the Test Kitchen to answer.

    how can i incorporate marijuana into a pizza?

    My thoughts are the fat in the cheese will absorb the cannabanoids.

    Option A - Decarboxylation MJ in a 170 degree oven until just crumbly. Crumble and sprinkle over the pizza and then add the cheese. Bake pizza as normal. This would work best for fresh MJ.

    Option B - Same as above however do not do the decarboxylation and just add to the pizza as stated above. This would work best for schwag.

    I can't stress enough....you not cover the pizza heavily. A little really does go a long way in cooking. Edibles will put you to sleep if you get carried away with the amount used.

    For a 14" pizza I would use no more than:
    • 1gr - schwag
    • .5gr - dank
    • 5gr - wet weight of fresh
    Anyone have any additional suggestions? If anyone tries it, please post your results. I will try to get this on the menu soon.
     
  4. There is oil needed when making spaghetti sauce from a packet (I use Lawry's sauce packet).

    I'm sure it would give that pizza a little kick.

    Are you planning on making oil to cook with? If so, you could try using THC olive oil in your pizza dough recipe - if you don't want to eat bud...just a thought :)

    the dough recipe that I use calls for 1/4 cup of olive oil...I don't know if that would be enough to feel the effects, though I'm assuming it would be if your oil is strong enough :hippie: I guess we'll find out when one of us tries it :wave:
     
  6. I had a question asked to me on my wall so brought it out here to talk about.

    I actually have some olive oil cooking right now. It won't be ready for a while though. The Test Kitchen was a whirl of activity last night after an unexpected annoymous donation of some fresh stuff!

    How are the stir-frys coming with the oil? Good results?

    I haven't made oil yet, maybe after this next harvest I'll make some and get to work on a stir fry recipe :)

    Looking forward to the report on the oil you have going.
     
  8. How about making a Pesto? It's almost all fat-laden ingredients. Don't skip the Basil and just include the MJ.

    Stir fry sounds good but usually it needs to get much much hotter than regular cooking to do it properly. My worry would be that the THC would be cooked off. A Canna Sesame oil might work.
     
  9. My thoughts were the fat in the cheese would be the adhereing property on it. But I love the idea of putting it in the dough and also a pesto. A pesto has a lot of different uses as well....the basil and garlic would help with the flavor as well. Interesting....I love experimental cooking! :hello:
     
  10. As someone who frequently makes brownies, I would reccomend you try something using the oil method. If you slow cook cannabis on the lowest possible flame setting, you can make some dankness. If you let it sit for ATLEAST 1 hour, making sure it NEVER bubbles, meaning at the slightest bit of sizzle you lift the pan off the flame until it chills out. I always get super fucked up off anything I make with this method. I even have my mom bake with oil I have made (as my mom is super in the kitched) to excellet results.

    If you make anything using oil I would 1000% be down to try it. I'm sure it won't be as delicious as anything you can cook up though MrsEd.

    Decarboxylation

    So we tried two types of butter, an olive oil infusion and a variation on the Green Dragon. I will post seperately about the butter and Green Dragon once testing is complete.

    We used some fresh as it was given while some went through the decarboxylation process.

    This is a way of "activating" the cannabanoids and is said to make for more potency when done prior to using in other ways. We shall see...

    We made a butter using fresh and then the smae with the decarboxylated mj to see if there was a huge difference in effect. Details later in the week on the butters after full review.

    Infused Olive Oil

    I am not a fan of heating olive oil and then using it so I have gone with the decarboxylation route on this one and then letting it sit in a cool/dark spot for a month.

    6oz Extra Virgin Olive Oil, 3 tablespoons decarbon mj

    Shake it up, mark it, and store away...results in a month on this one.

    It was a busy weekend with more testing still to be done with all of the base ingredients made over the weekend. Ed's peanut butter cookies will finally be made tomorrow! :rolleyes:

  12. You are in luck because I am giving some thought to a mj olive oil poached halibut. Then Doin with some stir-fry in the future and we will all be COOKIN'!! :hello:
     
  13. Citrus Fairy - a take on the Green Dragon

    Since the cannabanoids adhere to fats, acids and alcohol this will be a mix of alcohol and citrus.

    2 cups Triple Distilled vodka
    two valencia oranges
    1 lemon
    1 lime
    40gr of fresh popcorn bud

    Put vodka in the pan, add zest of all fruits

    Use the same fruit and get the juice out (made for just under one cup of juice)

    Add fresh popcorn, simmer for two hours

    Be sure to keep a close eye on the temperature. Try to keep within 160-175 degrees F. Keep lid on to keep the smell down.

    Strain out all of the big stuff and chill.

    This was my tester I put in the freezer to cool off and it actually turned to a slushy but thawed out as soon as it hit the air almost.

    I tasted a bit, maybe a 1/4 teaspoon. About thirty minutes later I smoked a bowl so ruined my testing dangit! I will say that I had visuals of waviness while Ed did not though. Another test tonight on that one. One of the housemates had about 1/2 teaspoon and we did not see him for the rest of the evening however he said that it did not do anything for him.

    The same housemate asked to try some tonight but wanted to go big. I gave him two tablespoons and he did it like a shot. He said it was harsh going down and thought perhaps in a margarita it might go down smoother (watch for another test to try that later). Within 10 minutes it was hitting him as a really heavy hard stoned. He mentioned a film in his mouth for the first 15 minutes which did not bother him at all. Within 45 minutes he took himself to bed for the night.

    Results:
    So, all in all it seems to be a success and something that you can regulate a bit.
    • 1/2 teaspoon to one teaspoon will be a bit chilly chill​
    • one tablespoon or more will be more along the lines to sleep with​

    Just store it on the shelf and it will last as long as normal peanut butter lasts so a while...you will eat it all before it goes bad.
     
  20. Tag for the PB cookies. I made canna-PB and it works well, but taste and texture is not too nice.
