my new plant looks pretty healthy, the only problem is i moved the light away when i was cleaning my room and forgot to put it back for a few days until i realized that it was about 6-7 inches tall. (this measurement is from where the seed was planted to the leaves). can i transplant it really deep so that it's normal height or should i just start over?
If you have more seed might as well start another. You could always try with this one. It will grow roots from the stem, and being young still, the cell walls are still soft as hell. At the same time, being young, if you cover too much, it may slow growth some/a lot). Would the stem be planted so deep in the container as to be near the bottom of it? Might cause it to fill the container with roots fast, and need transplanting again sooner rather than later. Depends on the container it's being transplanted into, so only you know. Your roots will seek out the moisture, so if your pots stay moist at the bottom (as is usually the case), then your roots are going to take up the bottom fast if it's planted so deep.
When you transplant just bury the stem until it's a decent height. Or if there is room in the pot/cup you have now, top it up with some soil. It would be a waste to start over.
