I recommend a product called budswell. It makes a great difference in taste, and smell. Also keep in mind that a proper flush is just as important. I tell everyone who buys from me that I grow in soil, which isn't true for hydro is the only way I'll ever grow.

Seems like people really like this stuff. Minus the smell. Lol

I can't tell if something is dirt or hydro but I only like the kush strains. I don't even like smoking reg just cause it gives a down headache.
If you want to improve taste I would recommend using Molasses during the last 3 weeks, then stop 4-5 days before chop-chop and flush with clean water.(in soil) The carbs in the molasses feeds the bacteria in the soils and the sugars will sweeten the buds lightly. This is the best way to improve taste organically(IMO). As for hydroponics I have both smoked really good hydro and really bad hydro. I cant make an accurate determination of the hydroponics or the soil affects taste, but I would imagine in soil there is more sediment and other things that could effect taste more than just water.
Blackstrap molasses is good for soil, only. Do not add molasses to your hydro buckets. You'll ruin things in short order, as undesirable bacteria will form. Generally speaking, I prefer the taste of soil grown weed. I grow hydro, however because the quality/quantity is excellent. If I were entering a contest with my grow, for quality, I'd go soil, and flush... A flush isn't necessary in hydro, unless you use too much, or the wrong kind of nutrients... This is debatable, but there are so many variables, and people's taste will range. I find that a proper cure has FAR more impact on quality than hydro/soil/flush/no flush...
