How to Hard Candies??!!

  1. I've tried a millon different ways to make hard candies like they do at the shops...but my candy wont harden!! I've followed recepies and tutorials....even used my mothers candy recipe!! I dont stir it, I dont let it get past 300°!!!!
    I hold my breath but maybe im not holding my face right

    Any advice really would be mich appreciated
    I've got my butters and my chocolates down, tinctures I've mastered!
    it's this Damn hard candy

  2. Hard crack stage for candy is 302°F and anything less will give you the soft candies. I used to have the same problem. Now I let it get up to about 310° to play safe. :)
