how much perlite should i use

a basic mix I use is 5parts soil(sunshine mix#4)....3parts perlite....2parts worm castings.

 

I would say a minimum of 10% but there is no maximum or ideal. It is inert and pH neutral so while it can help with drainage, water retention and soil compacting it otherwise has no impact on the soil.

And please use soil not "dirt".
