It shouldn't matter. The time it takes to transplant isn't enough to undo the lst. Just restake it after and it will continue where you left off. Just take your normal care when transplanting.
IMO, why take a chance of breaking her during transplant as they get bigger? That's a gallon pot and not her final pot, right? I would transplant into her final pot before letting her grow too much and before beginning to train her. Make sure you have some duct tape on hand later when you do transplant in case any branch breaks during the process.
