  1. its doing well simmering almost three hours now... is there any amount of time thats actually too much? obviously before it burns
     
  2. The amount of time can be hours, as long as the heat isn't too high. If you see the butter boiling, turn it down. Butter boils at a fairly low temperature, compared to water, and when it's boiling you're losing potency.

    You want to cook it for a long time, just under the boiling temperature. I've cooked for as long as five hours, and the butter was awesomely good. Just watch the temp.
