Canna Coffee Kisses

    If you like coffee, and you like cookies... then you'll love Canna Coffee Kisses. A little bit up... a little bit down... and a whole lot of yum.



    RECIPE:

    Makes: about 24 cookies
    Prep Time: 15 minutes (+ time to let the dough rest)
    Cooking time: 25 minutes (give or take a few minutes depending on your stove)
    Chillin time: 1 hour


    Ingredients:

    3 cups all-purpose flour
    4 ounces cannabutter (1 stick)
    2/3 cup brown sugar
    1 medium egg
    2 tablespoons of dark roast coffee (freshly ground is preferable)
    coffee bean for decoration (optional)

    Prep:

    -Sift the flour with a pinch of salt and set aside.
    -Beat the butter with sugar until light and fluffy
    -Scramble the egg with the ground coffee then beat this mixture into the butter mixture.
    -Work in all the flour in 3 stages not all at once until you make a ball of soft dough.
    (you may need to add a little bit of flower depending on your climate)
    -Cover this dough ball in with plastic wrap in a bowl and leave it to rest in the fridge for an hour to firm up.


    Cooking:

    -Heat your oven to 425
    -Lightly flour a board and roll out the dough.
    -Cut into rounds and place on buttered baking sheet (doesn't have to be cannabutter)
    (Optional: wet a whole coffee bean and push it into the center of the cookie)
    -Bake for 20-25 minutes until just lightly golden (they'll continue to brown slightly after you pull them out of the stove)
    -Transfer to a baking rack while soft and warm and let cool for an hour (if you can:p)

    They crisp up as they cool. (and if you want a really crispy cookie... melt down the cannabutter to a liquid before mixing all the ingredients)
