can/should I remove the really big leaves, not all but target a few?.

If they're still in Veg, then totally take out some of the larger fan leaves that are blocking other smaller growing nodes and bud spots.

 

Yes. I would remove all the leaves larger than 4".
I will defoliate 2-3 times during Veg. I also will defoliate 1-2 during early flower.
