Baking with alcohol tincture

  1. I was trying to make some cookies with everclear tincture and needed some help.

    The tincture I have is 15-20 mg/ml. I've just tried just mixing it in with store bought chocolate chip cookie dough and it didn't work too great. The unbaked dough didn't really want to absorb the tincture. Cookies turned out looking like cookies but I think I lost a fair deal of tincture.

    Does anybody have any good idea or recipes for this? I've noticed it seems to mix well with peanut butter so I may try peanut butter cookies. Also I know whatever I try has to get hot enough (160f iirc) to cook off the booze or it will taste bad

  2. Also if I decide to transfer to butter/coconut oil, do I just have to mix it in and cook off the alcohol or does it still take hours to infuse properly?

  3. Cookie batter isn't very good for absorbing the tincture due to all the other ingredients inhibiting the alcohol evaporation. It has to evaporate and leave the cannabinoids behind for optimal results and it's not able to do that in the batter. The extra liquid from the tincture would just seem to thin it. You should have decent cookies, though, as long as you didn't see any run off on the cookie sheet. The heat from the oven even for the few minutes it takes for cookies will finish the evaporation. Give 'em a try.

    I suggest using the solvent transfer for those kinds of things, though. It does not take hours. Just mix it with the oil/butter and set it in a double boiler/water bath sort of thing and evaporate it until the bubbles have stopped and the alcohol is gone. For this sort of thing it doesn't have to be perfect. Mix it in and enjoy.

    Use caution if you use a gas oven and you're using a bunch of your tincture in the mix. It shouldn't be an issue at those ratios but just be aware. :)

    I'm gonna test the cookies tonight. There was a bit of runoff as it just seemed to want to bleed out of it when cold, but maybe it wasn't too significant of an amount(but definitely wouldn't want to do this on a larger scale, glad I'm testing with just 4 cookies)

    Good to know I can do the solvent transfer quickly, thanks for the advice!

    And I used your recipe for the tincture too, worked unbelievably well so thanks for that too!

    What if he infused a small batch of extra sugar (like you did with the smarty candies) and let it dry and evaporate before mixing it in to the mix.
    Then add that to the cookie dough?
