my friend is an active vegan (kinda) baker and is just starting into magic baked goods. I was wondering if anyone knew any good muffin or bread recipies. If they were vegan that would be even more awesome.

Just replace the egg in your favorite muffin recipe, for xanthan gum and/or a bit of good soy milk, use coconut oil and lecithin when making your canna/hash oil, and you're good to go
The general consensus seems to be that, in spite of the fact that xanthan gum is made by fermentation, similar to (but quite not the same as) yeast, because it is a microorganism without a central nervous system, it is a vegan food. Guar gum, from the guar bean, can also help.
To get you started...
-Vegan Blueberry Canna Muffins-
- 1/4 cup canna oil
- 1/2 teaspoon salt
- 2 cups flour
- 1 & 1/4 cups sugar
- 1/3 cup unsweetened applesauce
- 1 tablespoon baking powder
- 1 teaspoon vanilla
- 1/2 cup soymilk
- 1/4 tsp xanthan gum
- 2 cups frozen blueberries
You will need a mixing bowl, for the first step: blending your dry ingredients, except your sugar. (So blend your xanthan gum, flour, salt, and baking powder.) Set aside.
Preheat your oven to 360 f, and line muffin cups with liners, or oil lightly with coconut oil.
You will need a large pot (suitable for stove-top use) for blending your wet ingredients and sugar, in this order:
Over a medium heat, blend your soy milk, apple sauce and sugar for 3 - 4 minutes.
Remove from heat, add your canna oil, and vanilla.
Slowly pour in your dry-mix/flour, and blend, stopping half way through to pour in half of the blueberries. Continue until the mix is blended and slightly lumpy, then stir in the last of your blueberries.
Fill the muffin cups 3/4 of the way, and bake for 23 - 25 minutes, or until tops are spongy-firm.
Cool for a few moments on a wire rack, then serve and enjoy
Edit- For those who are gluten intolerant, with xanthan gum or guar gum already being used, the recipe is perfect if the wheat flour is replaced by simple rice flour. You can experiment with honey and coconut sugars, if can sugar is an issue (a very, very small number of people who are gluten intolerant may develop sensitivity to cane sugar). Of course, you can use egg as well.
