Hon, the photo looks nice, but what you need to be looking at is on a smaller scale! She is getting close, though. Do you have a microscope? A jeweler's loop, or a good magnifying glass? You really are going to need one! Radio Shack sells cheap microscopes- you just need the cheapest type, like you'd get for a kid.
What you need to be looking at are the trichomes, especially the ones that look like tiny mushrooms. Are the tops clear, cloudy or amber colored? Let's do this the easy way- Run a search on
amber trichomes and you'll get posts with
pictures that will have detailed explainations telling you when your crop is ready.
And yes, you can harvest in two stages. I do it all the time- gives those "popcorn buds" a bit more time to fatten up.

May I make a suggestion for a larger crop? Top your plant next time! I like to get about 4 sets of true leaves and around 3 inches of growth beyond that. That top 3 inches makes a very nice clone!

And your original plant, after "sulking" for a few days will have the side shoots "take off"- each one trying to be the favored "top bud". (The highest bud makes chemicals that slow the lower buds' growth.) You will end up with 2 to 4 "main shoots" each which will produce a decent-sized bud. The buds will not be as big as if you had just one, but the total quantity will usually be more!
Also run a search on "low stress training" or LST.
