Steamed Habanero egg yolks (SOOOO SOFT because of bloomed gelatin), Lentil-white onion soubise cooked in olive oil with a dash of Celtic sea salt, tomato pulp, spinach and carrot. Pickled soffrito + kalamata infused aioli. This has potential as a cold dish with some formidable heat. The yolk resembles habanero gelato. Finally done. So it's pork dumpling soup, I reckon. Went gyoza style, as I'm unsure of how to fold a wonton. Steeped some pigs' feet in chicharron-habanero dashi and a little chicken stock, combined with the neckbone beer dashi from yesterday. Dumplings are made from wonton wrappers, ground the pork here with a spice rub... Habanero, champagne vinegar, toasted cumin, black peppercorns, smoked paprika, shallot, garlic, cilantro and Some pink Himalayan salt. Seared in ghee before going in the stock. A little cilantro and yellow onion, plus some Mexican sambal made from orange Arbol chiles, habanero, ghee, garlic, shallot and champagne vinegar. The flavor depth is off the charts! Some of the meals you've posted are just jaw dropping, from the way the presentation's done right through to the ingredients you can see, amazing! Do you have a background in hospitality or is it just a hobby? I'm even tempted to recreate some of your meals haha
