I bought a food deydrator, sliced up a few bananas and used it to dry them The dried banana slices taste like candy and stick to my teeth. Makes me want to eat all of them... yeah just as healthy as it was before you dried it. a whole dried banana has just as much sugar as a whole fresh one, it's just concentrated.

And as said - you feel that it's more sugary because it's compressed/concentrated, so there's more sugar per bite. i love my dehydrator! make jerkey, fruit chips, veggie chips. make a fruit puree and pour some on parchment paper to dry and make your own fruit roll ups! time to get to work! do up some blueberries for your cereal! i could go all morning...
Concentration is the key though.
