Works every time, though I don't know how long for medium rare I cover it in flour, pepper, and garlic salt. Then put it in at 500 for 8 min a pound, because we like it really rare. The guideline is 8-9 minutes per pound for rare, so it's probably 10 for medium rare But no matter how much it weighs, the total time it's in the oven is 2 hours. You just turn the oven off when the cook time is up and let it sit in there. It's worked perfectly every time, and I've made it dozens of times. The chicken bullion is an interesting twist! I've only made salsa verde once and did everything you did up to the point of cooking it after. That sounds fantastic overall! Did you do any culinary school, teach yourself, watch the food channel or what? I ask because the ingredients you're using remind me very much of the food channel. Not in a bad way, but in the sense that you really have a good grasp on flavor and technique.
