Kris Kristofferson was a great songwriter, but he didn't play his own songs very well. Me and Bobbie McGee is a good example. I think the definitive version of it is Roger Miller's. Sunday Morning Coming Down by Johnny Cash is also a good Kristofferson rehash. Willie Nelson's version of Always on My Mind is good, and more recently Shinedown did a pretty good version of Simple Man by Lynyrd Skynyrd.
I didnt like Snoop Doggs cover of "Riders Of The Storm" cause Jim Morrison is a lyrical god but it grew on me.. you should download it if you havent heard it yet...its gota good beat.
