Does anyone know of some good metal or rock bands that use eastern or middle eastern scales. ive always liked the sound of sitars and the arabic sound.

Not sure if this is what your looking for, but there seems to be an eastern influence on the guitars of this album. There is even a sitar at the beginning of this song I think:
