i studied aristotle last year and just started looking at aquinas in humanities. i really think that there's some truth to this. if our sense behaved differently, our world and our reality would be completely different. take snakes for example: they see in infrared. now lets just pretend that humans had the ability to see this way. that would be all we know, and that vision would be reality to us. how many different senses (or versions) are there that we don't posses? simply because we experience life through our senses does no make our perspective reality. there are many things we cannot hear or see, simply because we are limited by our senses.
