Use a lossless format. I recommend Apple Lossless or FLAC.
Lossless formats preserve all the original sound of the CD, so they sound as good as a CD would.

I only have 930 songs on my iPod...but it takes up 13 gigabytes. It's worth it though, especially for 60 GB and up iPods.
