Homemade onion soup...mmmmm

I made this last night from scratch. Its really easy and tastes amazing. I snapped a picture of the leftovers for yall.

Yayy HerbalFresh! Hell, I just made French onion soup from scratch, too (well, months later than you did, lol)!

I used Julia Child's recipes from her legendary Mastering the Art of French Cooking. First, I made a brown stock with beef & beef bones. Froze the stock since I wasn't going to use it for a few days (homemade soup stock only keeps 3-4 days in the fridge, unless you boil it every 3 days, so freezing is better).

Then, today, I thawed the stock and heated it in its own saucepan. While the stock was heating, I cooked down the onions, and added the stock.

Added cognac at the end, right before dishing the soup into bowls. Topped it with toasted rounds of bread (toasted under the broiler with butter, and rubbed with fresh garlic once they were out of the broiler), and sliced cheese. Broil, and voila!

This video featuring Ms. Child and some dude named Jacques is another method of making French onion soup which also looks delicious! RIP Julia!

Thats fucking badass. I took the easy way and bought fancy beef broth (broth is the most important part of a soup, use good shit.) but that homemade stock sounds amazing!

Sometime in the next few days I am going to make a carrot and parsnip soup.

Damn, carrot & parsnip soup sounds fan-fucking-tastic!

Thanks for the compliment, I was surprised at how easy (yet time intensive, ya gotta be home and awake for 6 hours to make a really good stock, I think) it was. Leeks FTW when it comes to a stock, too. Sometimes they're kind of expensive, but they add a great flavor. Would work for ANY stock, really.

Yay cooking! It's chemistry you can do at hooooome!

Word. French onion soup is that shit, man. I make mine with vegetable broth though, since I'm a vegetarian. That gave me the idea for some homemade tomatoe soup for tonight. Awesome...
