Well, this all comes down to personal choice. You could find a Binny's and have them give you tastes of different wines and then pick the one you like the most.
Personally, for me, theres nothing like a nice dry red wine.. Preferrably a Chianti or Merlot. I have had most of my wine in Canada since I could drink there and went to a few wine tastings.. I should have written down the names of some wines, but I didnt. (Blast!)
For a more fruity texture, you could try and find a decent Zinfandel, o rpink Zinfandel, but there are some very very nice dry whites out there. If you like a mroe fruity taste to your wine, check the label or ask someone at the store.. For a dry red, I reccomend picking up a bottle of aged Chianti.. (At least 5 or 6 years old, more if you can)..
This is just a layman's guide, but I'll be ringing up Hannibal Lecter for you shortly as he can choose a wine like no other.

Perhaps a Chablice Blanc? A bit on the tavish side for taste with liver.. But the aroma adds a nice touch.
