Any premium potting soil like Shultz is good. Most organic ferts recommend a tablespoon for every gallon of water. For the first dose of ferts use 1/4 of a tablespoon and be sure to water the plants an hour or so before applying them to avoid burning the roots. Keep in mind that it's better to use ferts in small doses more frequently than it is to use a lot at once. With that type of soil I wouldn't bother using any ferts for at least the first month.
