Welp, generally when a plant's leaves begin to 'taco' they are trying to transpire due to the heat. In other words, creating as much surface area for the stomata while at the same time trying to protect itself.
If you have a fan blowing directly on a plant this can sometimes cause the issue - since it will quickly dry out. I'd recommend first to use an oscillating fan if possible. Let the breeze blow 'by' the plant, hitting it briefly while it passes. Second, make sure you're using something to get the temperature of your canopy. In other words, putting a therm probe at the top of the plant where it's closest to the light. This will help you determine if the taco is due to actual heat (temps in the 90's) or because of the fan/humidity.
