Yea, you can grow plants taller with Scrog but for Sog it's generally a plant per square foot.
If you really need to prune then do it once before inducing flowering and a few weeks thereafter. If you want to train the plants then use some big rubber paperclips and straighten them out, then pull down the branch and fold the paperclip in half over it and stick it in the soil. Don't use anything metal for doing this...either rubber or plastic.

pierce holes in the pot and tie the branches open to maximise the yield, however this will take up more space!.....Peace out.....Sid
