Harvest Question

My Strawberry Cough plants are in their 8th week of flowering. The seed packaging from Dutch Passion says flowering time is 8-9 weeks. I've bought a microscope and the trichomes are 50% cloudy, 25% clear, and 25% amber. It would seem like its time to cut them down, however, many of the buds seem to still be growing. A lot of them have no brown hairs at all, and some of the buds have yet to fill out. My question is: should I harvest now? I dont want any too many amber trichomes, as i want to avoid a couchlock high. Will the white hairs still turn brown after I cut the plant down??
