Plants are 7 inches tall.

The stem feels real strong and is actually hard to bend. I don't want to break it.

If i can see correctly from the angle, your starting your 3rd leaf set? if im wrong my bad, you should be able to LST at the third set of leaves before it starts to get to stiff, if it already seems like it will break i would just let it grow w/o risking breakage from LST

Yes you are ready to begin LST, just be sure to be gentle as the plants grows continue to LST the plant so all branches grow evenly. Do not over LST you have to many small branches rather then a few large branches which is a more successful yield.
