i enjoy cooking so i can give you some insight to this.
i would use whole milk that should be just fine as far as fat. and instead of boiling it i would keep the heat pretty low....like medium/medium low heat. and just simmer it for 15-20ish minutes?? i duno but yeah if you bring the heat up too high it will scald and eventually burn the milk...both of which are gross.
