Since you're going to be periodically removing all the new growth from your mother plant when you take your cuttings, you want to leave the large fan leaves and older growth on. Otherwise, Mom's going to get hungry and maybe die on you.

Why would she get hungry without the lower fan leaves? Die? lol
If the leaves are excess just cut them off... and i always advise that moms be flowered after 3 months, a clone should be used to replace her.
Your mom plant wouldn't die even if you removed ALL the large fan leaves. The smaller leaves are perfectly capable of taking in light. Do not worry about your mom plant, she's there to be abused.
