I can't tell you about shrooms, I only had ecuadorians and hawaiians in Amsterdam, but if you care to know the ecuadorians gave a more intense trip. Usually they sell shrooms in boxes, one box per person is enough for a really good trip, unless of course you haven't used shrooms very often. I took a half a box of the ecuadorians and split 3 boxes of the hawaiians among 4 people.
As far as weed goes, you'll find pretty much the same strains (and hash) in all the coffee shops, but they're all top-notch. I'd recommend any shop in or around the red light district.
And don't smoke in the street. It's not allowed. Keep it indoors-in the coffee shops, or bring it back to your place if they allow it.
