Because freezing breaks the cell structure down....simple as that, i dont feel like going and reading my science textbook for a more complex description of the whole process. And by heads i mean trichome heads, the round bulbs...some of them dont fully un-attach so remain still on the plant matter, freezing helps them come lose, and while freezing also makes the plant matter come appart it exposes more material that may have smaller traces of thc so you get a little bit more.

THC is not the only thing that gets you high, there are many other things that effect your high, and all of it doesn't just exist inside the trichome. Thc, thcv, cbd, cbn, cbc, cbg......those all are what get you high..... and thats why i say freezing helps break the cell structure (in more simpler words, freezing helps BREAK THE PLANT APART, rendering its cell walls 'helpllessss' so it falls appart easyer) which then allows the more substances to be released.... such as if you have a fat branch and just cant break it down into small pieces so you freeze it and it comes appart easily exposing not only the skin and hollow core, but the woody stuff as well which has some of those substances.
